McEvoy Ranch Bruschetta - Artichoke Lemon

We love the combination of fresh artichokes, olive oil, capers, and lemon juice in this bruschetta. Mix it with eggs and pop it in the oven for an instant and delicious frittata. For lunch, try it with fresh pappardelle pasta and shaved Parmesan. It also makes an excellent topping for Sole or other white fish.

About McEvoy Ranch:

Located 30 miles north of the Golden Gate Bridge in the rolling hills of Marin County, McEvoy Ranch is a 550-acre working, organic ranch, committed to sustainable farming practices. Inspired by her love of Tuscan olive oil, Nan Tucker McEvoy founded McEvoy Ranch in 1990. Today the Ranch is run by Nan's son, Nion, and has for more than 30 years making the highest quality, award-winning extra virgin olive oils, small-lot wines, and culinary products.

To maintain a healthy balance with its natural surroundings, only 15% of the ranch is planted. This purposeful strategy aligns with their strong commitment to ensuring good land stewardship for the olive orchards, grape vineyards, and other fruits, vegetables, and flora grown on the estate.
