At Scout, canned seafood is about the craft of preservation, like charcuterie and cheese. In Europe, some of the best catch is sent to be preserved so it can be enjoyed year-round outside of harvest seasons and, yes, seafood is seasonal. Scout is bringing this tradition back to the North American table. From watching fishmongers unpack their daily catches in PEI, to perfecting her clam chowder, seafood has long been a part of Chef Charlotte’s life. After working in Canada’s most creative seafood kitchens, she began to wonder how the home chef could enjoy more of it locally. After discovering an 100-year-old canning machine in her friend’s attic, Chef Charlotte was inspired to revive the tradition.
