This is a fragrant, traditional Moroccan spice mix. The name means 'top of the shop" or a merchant's best spices. Traditionally each family has their own recipe, often a closely guarded secret. Our blend is spicy, evocative, a taste of the spice bazaar in every bite. It's delicious with couscous, vegetables, tagines, curries, roasted chicken and lamb. For our blend we use allspice, cinnamon, coriander, cloves, cumin, black pepper, white pepper, fennel, ginger and turmeric.

Pascale's Kitchen was founded by Santa Barbara resident, Pascale Beale. Pascale grew up in England and France surrounded by a family which has always been passionate about food, wine and the arts. She was taught to cook by her French mother and grandmother. She has, over the past 11 years, written numerous books, articles for local newspapers, food magazines, and is a columnist for the James Beard award winning publication, Edible Santa Barbara.
