We highly recommend an optional roasting of your garlic before starting. See our Roasted Garlic with Robust EVOO recipe. Place the cauliflower and water or chicken stock in a medium pot and bring to a simmer. If you are not using roasted garlic, add your fresh garlic cloves to the pot as well, simmer for 6 minutes, and then drain thoroughly. Place the still hot, drained florets in a large bowl with the crème fraîche, Garlic Infused Olive Oil, roasted garlic (if you did not add fresh garlic to the simmer), Pecorino Romano, salt, and pepper.
With an immersion blender (stick blender), processes the ingredients until just puréed or to desired consistency, or place in a food processor or blender, pulsing to desired consitency. To finish, sprinkle with additional grated Pecorino, a drizzle of Garlic Infused olive oil, and chopped chives.Serves 4-6
